Gluten Free Stove Top Ziti

I would like to share one of my favorite “go to” recipes. I believe I have stated before, I love pasta and sauce. I was delighted to be able to prepare one of my favorite meals gluten free and it was delicious. The recipe is for a stove top Ziti: 1.) Gluten free pasta ( I prefer Ziti Pasta but I sometimes use Penne Pasta) 2.) Ground beef (I have used ground turkey or ground chicken on occasion) 3) Spaghetti sauce (I prefer to make a homemade sauce but any jar sauce will do) 4.) Shredded Mozzarella cheese 5.) Seasonings: Oregano, Thyme, Garlic, Salt, Sugar, parsley and diced tomatoes First I prepare the ground meat by browning it in a skillet. Drain and add sauce. Bring to a simmer, stirring regularly.  Once you have a simmer begin to add your seasonings to taste. The sugar is optional. I just add a teaspoon to my sauce. Add your diced tomatoes and continue to simmer on low heat. Now, in a sauce pan bring water to a boil. You want enough water to cover the pasta you will be using. Make sure the water is at a full boil before adding your pasta. Let cook 2-3 minutes and drain. You do not want the pasta completely done because it will continue to cook in your sauce and become over cooked. Once you have drained your pasta add the meat sauce to your pasta. Mix thoroughly. Cover and let simmer on a very low heat until your pasta has reached the texture you prefer. Once your pasta is done, remove from the heat, stir in some mozzarella and then add some mozzarella to the top. Cover, let sit. The heat from your Ziti will melt the cheese. Enjoy!
